Heat 2 tablespoons vegetable oil in a large frying pan and brown the bacon dice. Remove the bacon from the frying pan with a slotted spoon and place on a paper-towel lined plate. Keep warm. Dip the trout in the milk, then in the flour. Heat the fat in the frying pan where the bacon was cooked and fry the trout until golden-brown, about 4-5 minutes per side turning once. Season with salt and pepper and sprinkle with the bacon. Mix together the garlic and parsley and add it to the frying pan with the fish. Cook for 1 minute. Serve with steamed new potatoes.
